Introduction

Rather a pretentious title, but I was kind of grasping at straws:) I am a foodie in the sense that I like to cook and experiment but most importantly, that it should taste as good as it possibly can – life is far too short to settle for anything less!
I want to put in a disclaimer at this point – I started the journal when I was diagnosed with T2D (Type 2 Diabetes) so that I could document my progress, anything new I learn, links to interesting/useful things and write successful recipes down. You should take advice from health care professionals as to what’s best for your own situation and always confirm any information about any changes you want to make by checking out more than one source. I’m sharing my experiences because I’ve been asked to and because I’m happy to share what I’ve learned. Be aware that as I’m learning, my thoughts are changing and some of what I was doing or not doing in the early days has changed, but this is the story of my journey and of course it's constantly evolving. If you are documenting a journey of your own, please leave me a comment so I can come and share yours too.
As I'm going along, I'm doing a tremendous amount of research and learning so much that I wish I'd known 40 years ago. What I'm learning is also relevent to my husband who has CHD so he has changed his diet too - quite contraversial, but he did what he was told for 24 years after his first stroke at the age of 40 in 1992, following the dietary advice and taking the medications prescribed and he still went on to have 3 more strokes, put on weight and has now developed CHD so we are evaluating a lot of information and he's changing what he does. He's already 24lbs lighter at the time of writing this (14/05/16) but it's early days and was a big decision to take so we would always advise that you find out as much as you can and evaluate the information for yourself but if you look under the blog header you will see some pages, keep an eye on these because it's where I'll be adding links that we've found useful and you can check them out and make up your own mind.

Choosing Wisely in the UK: reducing the harms of too much medicine


None of us do better taking medication we don't need and money that the NHS is in dire need of could be utilised elsewhere - imagine what we might achieve by working together.
Below you'll find my prescription to better health - you can choose whether to fill this one just like you can any other but I think you know by now what my views are on food as medicine. The right diet can be the most poweful tool towards good health that we can employ so I hope you enjoy this one.


 You can use raw chicken if you prefer - cut it into bite sized pieces and add it to the pan with the choritzo, turning it in the oils and fat to colour it and remove it at the same time, re-adding them together. It will probably need at least 20 minutes simmering time and may need a little extra stock or water so keep an eye on it. I like to use thigh meat if I'm doing it this way. This recipe will easily serve 4 people. If you want a little extra fat, dress it with a little extra virgin olive oil drizzled over as a condiment at the table.

I'm not trying to force my views on anyone else - our health is far too important for us not to take personal responsibility for it, but I can't find all this vital information and not share it so that you can have the chance to evaluate it and make your own mind up. All of the people listed are worth listening to/reading. There are links on the pages above already and more will be added as a) I get the time and b) find more. Please do yourself a huge favour and don't say "I wish I'd known this 30 years ago" as I do now.

Most people probably have a favourite quiche recipe and this (or should say these?) comes into that category for me. It's nice and soft as a quiche should be but firm enough to be stable without the crust. It's great to take on a picnic.

Even though this journey started out as me determined to become the expert in MY diabetes, the more I learn, the more I realise it's about so much more! I've always believed in the holistic approach and this way of eating and life is exactly that. It doesn't just look after my diabetes, it looks after ME and my husband too. I've said it before and I don't doubt I'll say it again - I wish I'd known about this 30 years ago! LCHF rocks!

This is still a favourite recipe and was probably the one that converted Tom to the LCHF way of eating. He tasted mine and said "make enough for two next time please" We've had it several times since then. The only thing I do differently now is to cook the slices of aubergine in the oven instead of frying them. I liberally brush both sides with olive oil and put them onto some baking parchment. Depending on how thick the slices are, they'll take between 20-30 minutes on 200 fan.

Just in case you're wondering, the sticky toffee cupcake was homemade and yes I did enjoy it! Haven't had one since though up to the time of writing this on 22nd May 2016 and I don't feel deprived at all. I love how my mindset seems to have changed.

I had a debate with myself about whether to share this recipe because as my research had progressed, I realise just how much damage this previously-considered-to-be-healthy food actually isn't for a great majority of people. (See the various links on the reading list and useful links pages to see why the dietary advice we've been given for the last 30-40 years has actually been wrong. I'm not a professional and I would rather that you got your information from people who are.) However, it is a good recipe that works well and plenty of people still enjoy bread so in that spirit, I've decided to share it and let you all make your own decisions. If you choose to make it, I sincerely hope you enjoy it.
